Memorial Day Minted Peach Salsa May 24 2015

You will need:
grated zest of 1 lime
1 to 2 tbsp fresh lime juice
1 tsp kosher or sea salt 
1/8 tsp freshly ground pepper
3 large, firm but ripe peaches, peeled and cut into 1/2 in/ 12mm dice
1/2 cup/ 70g diced red onion
1 jalapeno chile, seeds and ribs removed, minced 
1/4 cup/ 15g chopped fresh mint
baked tortilla chips, baked wonton crisps, poached shrimp
In a medium bowl, whisk together the line zest and the juice, salt, and pepper until the salt is dissolved. Add peaches, onion, jalapeno, and mint. Mix gently to combine. Taste to adjust the seasoning. Transfer to a serving bowl. cover, and set aside for at least one hour to allow the flavors to meld.
